How to Prepare My "Turkey Spinach Egg Bake"



Good morning!!!  For those of you who were witness to my fresh out of the oven "Turkey Spinach Egg Bake", and for those of you who missed it; I have put together a step-by-step tutorial on how to make your own.  This recipe is also being pinned to pinterest, so please feel free to share it with your friends and family.  It is delicious - and you will not regret it!  So here we go!!!

Ingredients :
* muffin pan
* butter stick
* sliced deli turkey, a wonderfully delicious and healthy alternative to bacon.
(If you choose to use bacon, you will need to fry bacon before using in the recipe.)
* carton of eggs
* frozen spinach
* herbs (you can use any you like, I used : oregano, thyme, & rosemary)
* pepper
* sliced onion
* sliced tomato
* sliced mild cheddar cheese squares

Step 1!
Make a pot of coffee or tea, it will help you feel better since you are most likely making this in the morning!
Lightly grease the muffin pan with your butter stick, only grease as many muffin cups as you need.  I strongly recommend butter as Pam and other substitutes has a tendency to "fry" the surface of the egg touching the tin instead of giving you a nice baked finish.

Then, do follow the order of this sequence or the vegetables will not cook properly, or some will be overcooked.  First take a slice of turkey, fold in half and place into each greased muffin cup.  Crack 1 egg over the turkey, then using a fork, break the egg yolk egg.  Sprinkle frozen spinach into each cup.  I recommend frozen spinach when baking so that it does not overcook in the oven.  If you use fresh spinach it may be well overcooked and not as tasty.  Top the spinach with herb mix and then grate peppercorns (or sprinkle pepper powder) over top.  I do not recommend the use of salt, as there is plenty of salt in the sliced deli turkey to help develop the flavor.





Preheat your oven to 425*.  Now I am using a dark muffin pan and I do live a hair above 5000' elevation.  So if you try this at home and have to adjust your oven temperature, please let me know so I can include your information in my directions!
Take your sliced onion and tomato and cut the slices into quarters.  Layer the onion over spinach and herbs, then cover up with the tomato.  If you would like your egg bake to be cheesey, place 1 of the cheese squares on top of each cup.




Pop the muffin pan into the oven once it's preheated and let it baked for approx 12-14 minutes.  While egg bake is baking, make another pot of coffee or tea, you know you want to enjoy a fresh cuppa with your easy-to-make egg bake breakfast!  Slice up fresh fruit and toast some whole wheat bread.  Spread butter or jam, or whatever topping you like.  Have your plate ready to go!
Egg bake should have a solid texture when tapped with a fork and not have liquid egg running.  Pull the pan out and let sit for 1 minute.  Use a knife to separate the egg from the pan surface before removing from the pan.  Serve and eat immediately while hot!  Enjoy!!  Please leave me some feedback telling me how much you enjoyed my "Turkey Spinach Egg Bake", I would love to know what you think!  Thanks!
